Prickly Mojito

Method:

In a tall glass add the simple syrup and mint, then gently muddle. Add the lime wedges, and then muddle. Next add the gin and crushed ice. Top with soda water, then stir with a bar spoon. Garnish with edible flowers and a fresh mint sprig.
