Prepare the simple syrup by adding the sugar and water to a pot on medium heat. Stir until the sugar has dissolved. Reduce the heat to low and add 2-3 thyme sprigs. Simmer for 5-8 minutes, then remove from the heat. Remove the thyme sprigs.
In a cocktail shaker add Waterloo Gin, lemon juice, thyme simple syrup, and ice. Shake vigorously. Strain into a Collins glass with ice. Top with topo chico, and garnish with a fresh thyme sprig and lemon wheel.
