Waterloo Lavender Cucumber Sour

No.9 Gin

Ingredients:

  • 12 oz Waterloo Gin, No. 9
  • 6 oz lavender simple syrup
  • 6 oz fresh lemon juice
  • 3 oz water
  • 6-10 cucumber slices, plus more for garnish
  • lavender sprig, for garnish

Lavender Simple Syrup:

  • 1 cup water
  • 1 cup sugar
  • 1 tablespoon dried lavender

Method:

To make the lavender simple syrup combine water, sugar, and lavender in a pot. Bring to a gentle simmer and stir until the sugar is dissolved. Remove from the heat, and let steep for 15 minutes. Strain out the lavender. Set aside and cool to room temperature.

In a pitcher add the cucumber slices, gin, simple syrup, lemon juice, and water. Stir until ingredients are combined. Let sit for 1 - 2 hours, allowing the cucumber slices to infuse.

Pour into a rocks glass filled with ice, and garnish with a cucumber slice and fresh lavender sprig.
