Prickly Pear & Rose Gin

Ingredients:

Makes ~ 16 servings

  • 3 cups Waterloo Gin, Prickly Pear and Rose
  • 1 ½ cup fresh lemon juice
  • 1 ¼ cup simple syrup
  • ½ cup water
  • champagne, to top
  • lemon peel, to garnish

Method:

In a large pitcher add the Waterloo Gin, lemon juice, simple syrup, and water. Gently stir with a bar spoon until ingredients are combined. Place the pitcher in the refrigerator for one to two hours.

Pour ~ three ounces of the gin mixture into flutes. Top with champagne and garnish with a lemon peel!
