Prickly Pear Collins

Prickly Pear & Rose Gin
  • 2 oz Waterloo Gin, Prickly Pear & Rose  
  • 1 oz simple syrup  
  • 1 oz fresh lemon juice  
  • 4 oz  - 6 oz soda water  
  • prickly pear slice, for garnish  
  • lemon twist, for garnish  

Method:

In a cocktail shaker combine lemon juice, simple syrup, and ice. Shake until chilled. Strain into a Collins glass filled with ice. Top with soda water and float Waterloo Gin on top.
