Waterloo BBQ Rib Sauce

Barrel-Aged Gin

Ingredients:

  • 1 tbsp extra virgin olive oil
  • ½ small yellow onion, finely diced
  • 3 cloves garlic, microplaned
  • ½ cup Waterloo Barrel-Aged Gin
  • 1 cup ketchup
  • ½ cup apple cider vinegar
  • ½ cup dark brown sugar
  • 2 tbsp honey
  • 2 tbsp dijon mustard
  • 1 tbsp worcestershire sauce
  • 1 tsp smoked paprika
  • ½ tsp salt
  • ½ tsp pepper
  • 1 tsp orange zest
  • 1 tbsp fresh lemon juice

Method:

Heat olive oil in a medium size saucepan over medium heat. Add the onions and garlic, and saute until softened and translucent. Add the Waterloo Gin and bring to a gentle simmer. Cook for ~ 3 - 5 minutes.

Add the ketchup, apple cider vinegar, brown sugar, honey, mustard, worcestershire sauce, smoked paprika, salt, and pepper. Stir until ingredients are combined.

Reduce the heat to low and let the sauce simmer for 20 - 25 minutes. Stir occasionally.

Remove the saucepan from the heat and add the lemon juice and orange zest. Stir to combine, and taste to adjust the seasonings. Set the sauce aside and let cool to room temperature.

Add the sauce to a blender and blend until smooth. Brush the sauce onto ribs or chicken during the final 20 - 30 minutes of grilling or baking. Enjoy!
